The Mobile Oven
2011
Vic Carlesi worked at a power plant for over 30 years while Nicalena worked as a teacher and then principal of a catholic school. After raising 4 absolutely gorgeous adult children, they agreed it was time to pursue their passion for wood fired pizza.
Ever the self-starter, Vic decided to build his own pizza oven, but not just any regular pizza oven, this one was mobile! Now they could haul this 1 ton oven around from party to party.
Marrying Pizza
2012
Upon finishing the oven, Vic and Nicalena were approached by a family friend, “Would you be able to serve pizza at my daughters wedding in 2 months?” Before he had time to consider, Vic said “Absolutely!”
Nicalena set to work crafting her take on the classic Margherita sauce recipe for their, now famous Carlesi Margherita, (What's a Pizza Margherita? Click Here) while Vic perfected the art of the dough. They tirelessly experimented with flavor and texture combinations until they were sufficiently “wowed” and “stuffed” with too much pizza. Along with the Margherita, they created 3 other options for the event, the precursors to the current favorites (Italian Mac + Cheese, Chicken Florentine, and Hazelnut Strawberry).
The day finally arrived, Vic and Nicalena called in the calvary (their aforementioned four gorgeous children) to assist in the endeavor. As the guests filed in, the conversation and questions began to float through the air about this igloo-like structure on wheels that baked pizza.
The guests remarked at the extraordinary experience of their pizza being cooked in less than 2 minutes right in front of their eyes. "Maybe we could actually do this..." Vic whispered to Nicalena.

2018
Since the wedding Vic and Nicalena (and a rotating cast of family members) have successfully catered hundreds of events. You can find their oven at graduation parties, baby showers, birthdays, and even the local senior prom! All the while, perfecting their craft, improving their methods and creating a multitude of specialty recipes.
After Vic and Nicalena retired in early 2017 they set to work on the physical location for their business in Kittanning, PA. Only about a year later, after the redesign of the interior, they were able to open their doors to an anxiously waiting public on January 3rd, 2018.
